Cheesy Beefy Lasagna

Prep Time:                  30 minutes

Cook Time:                  1 hour


1-2 Tablespoons of Extra Virgin Olive Oil

1-2 lbs of Ground Chuck Beef

1 medium White Onion

1 lg Clove of Fresh Garlic

1 lg can of Italian flavored Diced Tomatoes

1 sm can of Tomato Paste

1 lg can of Tomato Sauce

1-2 Boxes of No Boil ready lasagna Noodles

2 lg Eggs

2 cups of Cottage Cheese

1/2 cup of Grated Parmesan Cheese/fresh opt.

2 teaspoons of Freshly Chopped Parsley/bottled opt.

1 teaspoon Salt

1 teaspoon Black Pepper

1 teaspoon Season Salt

1 teaspoon of Italian Herb Seasoning

1 lg block of Mozzarella Cheese/ also Opt.  use fresh Mozzarella

1 medium block of sharp cheddar cheese shredded

Step 1:

Preheat oven to 375  degrees.

In a large mixing bowl whisk large eggs together with Cottage Cheese, 1/2 cup of Parmesan Cheese, Parsley flakes, salt, pepper and Season Salt.

Put aside.

Step 2:

In a large skillet, on medium heat, add Extra  Virgin Olive Oil to pan, wipe excess oil up with paper towel.

Saute’ Onions, diced Garlic Clove until softened,

then add Ground Chuck Beef,

after Beef is browned add 1 teaspoon of Italian Herb Seasoning to meat, continue to brown.

After, beef is browned and cooked throughly, drain and then add diced Tomatoes, Tomato Paste, and Tomato Sauce, stir well and  cover skillet.

Turn heat down to a simmer and continue cooking for 10- minutes, until blended well.

Step 3:

In a large 9×13 casserole dish,  start layering your ingredients.  First, spoon a little of the meat sauce on bottom of casserole dish.  Next, lay 4 of the lasagna noodles covering the pan, overlapping if necessary.

Spread half of the Cottage Cheese, Egg and Spice mix over the lasagna noodles.  Cover well.

Next, scoop your meat sauce over the cottage cheese mixture covering generously with the meat.

Now, sprinkle mozzarella Cheese over meat sauce covering well also.

Now, repeat with the lasagna Noodles, Cottage Cheese Mixture, then your Meat Sauce, generously.

Lastly, sprinkle the remaining Mozzarella Cheese and Sharp Cheddar Cheese, all over the top of Meat sauce covering well.

Remember, its called Cheesy Beefy Lasagna!:)

Bake in center of oven 30 to 40 minutes until Sauce is bubbling around the edges.  Place a cookie sheet under the lasagna casserole dish in oven for any spill over.   Remove and let stand for 10 minutes before serving.  Serve with a green salad and fresh bread, sprinkled with grated Parmesan Cheese and salt and pepper to taste.
