“Chicken ‘n Dumplings Galore”
Ingredients for Chicken:
3-4 Chicken Breast
5-6 cups of Chicken Broth
1 Bay Leaf
1 small White Onion chopped
1 Tablespoon Coconut Oil
2 tablespoons of real butter
2 Ribs Celery Chopped
2 Cloves of Garlic chopped
Ingredients for Dumplings:
3 cups of All-Purpose Flour
Salt n Pepper to taste
1 -1/4 tablespoon of Baking Powder
1 1/4 Cup of Heavy Cream
2 -1/2 Tablespoons of Salted Butter
1 Tablespoons of Chopped Parsley Leaves or Flakes
(1/2 Tablespoon of Chopped Parsley divided)
1 Teaspoon of Chopped Thyme Leaves
Directions for Cooking Chicken:
In a small sauce pan over medium heat add coconut oil and butter, once melted, add onions, celery and garlic. Saute’ til soft about 3 to 4 minutes or until softened.
In a large pot, add 4 cups of Chicken broth, uncooked Chicken breast, 1 or 2 Bay leaf with your sautéed onions, garlic and celery.
Cook Chicken breast on low heat about 20 minutes, or until cooked through. While your Chicken is cooking you can now start to prepare your dumplings.
Directions for Dumplings:
In a large mixing bowl, add flour, salt and pepper, and 1/2 of a Tablespoon of Chopped Parsley and a pinch of Thyme leaves. Whisk together set aside for the moment.
In a medium sauce pan, bring Heavy Cream, butter and rest of the herbs to a low simmer or until melted, and then add to your flour and seasonings.
Stir with a rubber spatula and mix well.
Using your hands to form dough into dumplings. When you have made all the dough into balls, cover bowl with a towel and set aside, for the moment.
Back to your Chicken:
After, your chicken cooked, place in a bowl and let cool.
(Remove Bay leave from Chicken broth, discard)
After, the chicken is cooled, use a large fork and start shredding chicken into small to medium pieces.
Put the shredded chicken back into bowl and take over to your pot of Chicken stock. Pour shredded chicken into your Chicken broth, continue to cook on low heat.
Now, start adding your Dumplings one at a time being careful not to splatter when you are adding them into the Hot chicken stock. Continue to cook on low simmer heat. As you are adding the Dumplings to the Chicken, you can add the other 2 cups of Chicken stock. After you have added all your dumplings, and the other 2 cups of Stock, try not to stir very much, you don’t want to disturb your dumplings.
Cook on low simmer. Add salt and pepper to taste. Cover with lid and cook for another 30-40 minutes, If you do need to stir, do it carefully. It’s important you continue to cook your chicken and dumplings on low heat so they don’t stick to the bottom of the pan.
Serve with some warm bread and your favorite drinks.
